A magnificent knife, as beautiful as it is effective.
I’d been looking for a Scandinavian knife for some time that was simple, robust, elegant and genuinely usable every day, and I’m absolutely delighted with my choice of this Helle Fjellkniven.
From the moment it arrived, the first thing that stands out is the quality of the finish. The curly birch handle is beautiful, with a truly superb grain, and it feels excellent in the hand. The handle is perfectly proportioned to the blade and offers a comfortable, secure grip, whether for precise work or more demanding use. You can immediately tell this is not a knife made only to look good: it is a real tool.
The Sandvik 12C27 steel blade is an excellent choice for this kind of knife. It is stainless, easy to maintain and, above all, very pleasant to sharpen. The Scandi grind gives an extremely effective edge that is easy to keep keen. The knife arrived with a very good edge, and after a few uses it is still just as enjoyable to use.
I use it every day, especially for preparing and cutting my food: bread, cheese, cured meats, vegetables, onions, and so on. That is exactly what I appreciate about it: despite its traditional look and outdoor character, it is precise and nimble enough to use every day in the kitchen as well as outdoors.
The polished blade is also very successful. It gives the knife a clean, elegant finish and really highlights the traditional character of the model. The construction is light and well balanced, which makes it very pleasant to carry and to use for long periods without fatigue.
Another big plus is the leather sheath. It completes the knife perfectly and further enhances its authentic feel. The leather and curly birch really give the impression of holding a traditional Scandinavian knife rather than just a mass-produced one.
I also chose to have "ARÈS 27 MAI 2025" engraved on the blade, and the result is beautiful. The engraving is discreet and fits the knife perfectly without spoiling its appearance.
After using it, I really understand why Helle has such a reputation. This is a knife that combines beauty, simplicity, efficiency and build quality. There are no gimmicks: a good blade, excellent steel, a beautiful handle, a leather sheath and a design meant to be used.
For anyone looking for a truly versatile Scandinavian knife that is as pleasing to look at as it is to use, I would absolutely recommend this model. It is exactly the kind of knife you buy once and want to keep for years.
