Choosing the best gouge depends on what kind of woodworking you're doing. There are different types of gouges, each with a different shape, width and intended purpose. Which one you choose depends on the intended result.

Types of gouges

There are different types of gouges, each with a different purpose. There are gouges in a U, V, and flat shape. A U-gouge (or veiner) is used for roughly hollowing out wood. For more delicate applications, such as cutting lines, working out details or making angular cut-outs, the V-gouge is the appropriate choice. There are also straight gouges, which are mainly used for smoothing surfaces and making precise, flat cuts. Think geometric lines here, for example. You can also create convex surfaces with a straight gouge.

Gouges are available in different widths, allowing you to remove more material in one go and get a neater result with wider cuts.

Each gouge has a so-called sweep, an indication of the curvature of the cutting edge. The higher the sweep number, the stronger the curvature. This information is especially useful when putting together a complete set of gouges, so you can put together a set for a wide range of shapes you can cut.

How you are going to use the gouge depends on how detailed you are going to work. There are hand gouges that fit comfortably in your palm where you can press and cut very precisely. Then there are gouges that are a bit larger with a straight handle, these are meant to be used with a hammer. This allows you to remove large pieces of wood faster. This is often used for less detailed work.
